Mr. Manuel Barón Fernández began his wine producing activity in 1895, starting out from some old soleras acquired from Mr Anselmo Paz and the long-time experience transmitted by the family of his wife, Mrs Dolores Barón (Romero Sánchez).

Solera is a process for aging liquids such as wine, beer, vinegar, and brandy, by fractional blending in such a way that the finished product is mixture of ages, with the average age gradually increasing as the process continues over many years. A solera is literally the set of barrels or other containers used in the process. Products which are often solera aged include Sherry, Madeira, Marsala, Mavrodafni, Muscat, and Muscadelle wines; Balsamic, Commandaria, and Sherry vinegars; Spanish brandy; and rums.

In the Baron Romero family there are more than 410 years, (more than 10 generations without interruption)- dof handicraft, experience and tradition in wine growing that result in the prestigious soleras and the incomparable quality of their wines of.

The Manzanilla is the finest sherry.

It's taste is sensual, enchanting and fanciful. Its bouquet is feminine and delicate.

It is a very pale, very dry, penetrating- and- particular- aroma sherry. It is ideal as an aperitif and to go with food such as seafood and white fishes. It must be served slightly cold.
